This particular lot of coffee was produced by Sinsup Phisailert in Mae Suai, Chiang Rai, a province located in the north of Thailand. The farm named after his father, Lor Ko, which located on the mountain called Doi Chang, a place where most locals produce and grow coffee for living. Sinsup grew up with coffee around him since he remembered and inherited this 6.4 hectare from his father. He started producing his own coffee around 8 years ago and only produced commercial grade at that time. He used to depend on the local market to sell his coffee, which meant low prices and little reliability. In the past 5 years, he decided to concentrate on producing high quality coffees for higher prices and better income.

The only ripe selective cherries for this lot were carefully hand-picked prior to processing. Coffee cherries were left in the received tank for 48 hours, then weight sorted by water. The coffee cherry was pulped without water and left in the fermentation tank without water for around 96 hours until reaching the decided pH level. Following this, the coffee was then carefully dried about 14 days on parabolic beds. The coffee parchment is turned by Sinsup and his worker three to four times a day to ensure consistent drying and prevent over-fermentation. Once the coffee was dry and reach the moisture level of 9-10%, it was rested before milled and delivered to us.
