This exceptional nanolot was produced by our dear friend, mentor and sourcing partner in Brazil, Silvio Leite. As one of the country’s pre-eminent specialty coffee professionals, Silvio has poured every ounce of knowledge he has gained across several decades of work into establishing the vibrant and beautiful Cerca de Pedras, which will carry his legacy on for years to come. As he told us on a recent trip, “Sometimes you plant a tree but it’s not for you, it’s for future generations. My farm is like this; it’s for my daughters, for my team and for Piatã.”

At Cerca de Pedras, processing starts on the field. With Kleumon at the helm, the team of harvesters closely monitors the Brix degree (sugar) of the coffee cherries, which gives them a good indication of when they have hit peak ripeness – the perfect time for picking. Cherries were carefully harvested by hand across multiple passes, mostly by local women who are extremely disciplined and ensure only the very best cherries are selected.

This coffee was then naturally processed. Cherries were washed gently and carefully laid out in greenhouses to dry on raised beds. During drying, the cherries were turned several times a day to ensure they were drying evenly. At this stage, the coffee is primarily left in the shade, which slows down and extends the drying considerably. Silvio tells us this is key in improving and ‘saving’ the fructose and all positive attributes found in the fruit, which will contribute to a higher quality in the final cup.

Finally, the beans were separated into numbered lots and stored and rested in parchment in a purpose-built warehouse. They were then dry milled and prepared for export at Fazenda Progresso.
