Nossa Senhora Aparecida is an idyllic farm owned by Arnóbio Araújo, located in the privileged region of Piatã.

Processing for this coffee began on the field, when Arnbóbio and his sons carefully selected cherries only when they had hit their peak ripeness – the perfect time for picking. These were carefully harvested by hand across multiple passes, to ensure only the best were taken to Cerca de Pedras.

This coffee was then naturally processed. Cherries were washed gently and carefully laid out in greenhouses to dry on raised beds. During drying, the cherries were turned several times a day to ensure they were drying evenly. At this stage, the coffee is primarily left in the shade, which slows down and extends the drying considerably. Silvio follows this practice for all coffees processed at Cerca de Pedras, because it is key in improving and ‘saving’ the fructose and all positive attributes found in the fruit, which will contribute to a higher quality in the final cup.
