Kantima Tadplevthong or people know her as Ann, she is the second generation of coffee producer from Mae Ton Luang village, located around 60 kilometres away from the Chiang Mai City at the north of Thailand.  Her parent has been working as a coffee producer for more than 3 decades. Ann grew up with the coffee in her daily life and so passionate about producing better quality coffee. She started her own farm since 2018 and named the farm after her son, Phupa (means Rocky Mountain). Nowadays, Ann is working together with her family, especially get a close hand from her mother, Buachum or Mae Orn. The farm size is around 10 hectares and grow mixed variety of coffee tree, including Typica, Bourbon, Catuai, and Caturra. 

All the coffee cherry is handed-picked and this particular lot undergoes the washed processing. After harvesting, the coffee cherry was then washed and grade by using clean water from nearby river. Then, following by 24 hours fermentation without water in the sealed tank. The coffee cherry then pulped and the parchment went through the second fermentation for another 24 hours. When it reached the desired pH level, it rinsed with water to remove any remaining fruit and moved to the drying table under the parabolic roof covered with shading net to reduce the strong heat from the sun. Once the moisture reach 20%, the parchment then transfer to the rest bed. The total time of drying was 15-20 days depending on the weather.
