In the lush hills of Cajamarca, in Jaén’s Huabal district, lies Finca El Cedro, named after the tall cedar tree that stands proudly at its heart. For 27 years, José Mejía Paico has worked in coffee, following the path of his parents, who first taught him the rhythms of the land. It began as a small family tradition grew into a deeper commitment when he stepped into the world of specialty coffee five years ago.
At El Cedro, coffee is more than a crop—it is a family effort. José’s wife plays a fundamental role in every stage of the farm’s work, while their two children contribute ideas to continually improve quality. During harvest, extra hands join them to ensure only the ripest cherries are selected. The farm’s main variety, Caturra, makes up 70% of production, alongside Typica and Bourbon. After careful washing, the coffee ferments for 36 to 48 hours, depending on the climate, then dries slowly in a solar dryer under the watchful Cajamarca sun. The microclimate and productive soils give the coffee its character, but José believes true quality comes from dedication—good fertilization, lot renovation, and constant learning.
