Province: Jaén

This coffee was produced by Jose Joiver Garcia at El Romerillo in Peru. This particular lot won the 5th place on Cultivar Chicha Challenge - Peru 2024, Marsellesa variety, natural anaerobic fermentation. The cup profile features a vibrant fruity character with good aromatic both in fruit and subtle floral notes, including rose, strawberry, purple grape, peach, lychee, and watermelon, complemented by a long aftertaste together with sweetness of candy finished. The coffee carry through to a bright, clean finish, creating a lively and balanced experience. 

The coffee cherries were anaerobically fermented  in containers for 3 days at 15°C. The coffee cherries submerged in water and filled with honey to maintain  a temperature. After fermentation, they were transported to Zonanga for drying. At 35°C, the cherries were aired, inspected, and place on shaded platforms under roof and green mesh. The drying process will take around 28 days.

RECOMMENDED Suitable for Filter brewing methods and French press.
