La Isabela is a family-run coffee farm located in Consacá, Nariño, where coffee is grown with care, purpose, and deep personal meaning. The farm is named after the Deyby’s daughter, one of his greatest treasures, making La Isabela not only a place of work, but a symbol of legacy and family pride. Coffee at La Isabela is harvested by hand and carefully processed on the farm. Freshly picked cherries are depulped the same day and fermented under controlled, wet conditions for 15 to 24 hours, depending on ambient temperature, without the use of external inoculation. After fermentation, the coffee is washed and dried naturally on patios and raised beds, using thin layers and frequent turning over a period of 10 to 15 days, until the coffee reaches optimal moisture levels of 10–11%.

The farm is shaded by fruit trees, walnut trees, and native species, contributing to a healthy ecosystem and favorable microclimates. The main varieties grown are Colombia, Caturra and Castillo, with coffee representing the core of the family’s livelihood alongside crops such as plantain, orange, and lemon. Producing specialty coffee has transformed both the farm and the Deyby’s life. Improved organization, better agricultural practices, and a renewed passion for coffee have shaped the farm’s future.
