In the lush coffee lands of La Coipa, Cajamarca, lies Finca El Babaco, named after the tropical fruit that grows alongside its coffee trees —a symbol of freshness, vitality, and family sustenance. For Bernabé Padilla, coffee has always been part of his identity. As a third-generation coffee grower, his journey began when he was only fourteen, when his father gifted him half a hectare of coffee. Over time, he inherited two more and began shaping his own vision: to produce exceptional coffees rooted in tradition and innovation.

With more than 20 years of experience and nine years in specialty coffee, Bernabé has transformed both his farm and his family’s life. Together with his wife Neydi Tocto,

who plays a vital role in drying and supporting daily operations, they have improved infrastructure, built better drying modules, and strengthened their processes. El Babaco’s secret lies in its ideal microclimate and proximity to the Tabaconas-Namballe Reserve, which provide unique growing conditions for varieties like Bourbon, Geisha, and Catimor. His process involves selective harvesting, followed by dual anaerobic fermentation —first 24 hours in cherry, then 96 hours after pulping— and solar drying for about 18 days. Bernabé takes pride in his consistency in his working, which has motivated him to keep improving quality and achieving higher scores each year.
