Producer: Apiwat Yokruji

This coffee was produced by Apiwat Yokruji in Mae Suai, Chiang Rai, a province located in the north of Thailand. His farm named “One Villa” located on the mountain called Doi Chang, a place where most locals produce and grow coffee for living. Apiwat used to depend on the local market to sell his coffee, which meant low prices and little reliability. Now, he selectively pick their coffee cherries and sell their top-grade coffees for higher prices to Samadool Coffee team. After almost 7 years that we worked and supported Apiwat, we are ready and proudly present his coffee this year.

The only ripe selective cherries for this lot were carefully hand-picked prior to processing. Coffee cherries were left in the bag for 12 hours, then pulped. The coffee parchment was then washed with fresh and clean water from the natural water resource near by. After that, it moved to drain the water out on the bamboo bed for 5 hours. The coffee then left in the fermentation tank without water for 96 hours until reaching the desired pH level. Following this, the coffee was then carefully dried about 28 days on parabolic beds, which are constructed a bit like a ‘hoop house’ greenhouse, and act to protect the coffee from the rain and prevent condensation dripping back onto the drying beans. Once the coffee was dry and reach the moisture level of 10-11%, it was rested before milled and delivered to us.
