Cherries are selectively picked at peak ripeness, fermented for around 24 hours, and carefully dried in solar tents over 25 to 30 days. With varieties like Caturra, Catimor, and Geisha, Víctor continues to refine quality, motivated by the recognition his coffee receives and the impact it has had on his family’s life.
