This tiny 180kg Gesha micro-lot comes from Las Alasitas, a small farm owned by Pedro Rodriguez. Pedro is always innovating and trialing different processing techniques and in this case the coffee was processed with a strong influence from the wine industry. After being picked and weighed, the coffee cherries are pulped and then fermented in a sealed, anaerobic tank. The coffee was then laid out to dry on raised beds and regularly turned for up to 48hrs, before being finished in a mechanical dryer for around 35hrs, with temperatures no higher than 40˚C. When the coffee reached 16% humidity it was rested for five hours in a silo, and then carefully dried until it reached 11.5% humidity.
This Las Alasitas Gesha is a very outstanding cup that combines all good coffee aspects, including coffee variety, processing, roasting, and brewing method. The beautiful characters are jasmine, rose, bergamot aromatic, white peach, tropical fruit, and hint of lemon flavours, elegant and complex mouthfeel, finishing with sweet aftertaste like honey. It is a super limited about that you must get to try!
RECOMMENDED Suitable for Filter brewing methods and French press.
