COUNTRY: Colombia

STATE: Tolima

MUNICIPALITY: Ibagué

TOWN: China Alta

ELEVATION: 1,800m above sea level

VARIETY: Caturra, Colombia

PROCESSING: Washed

FARM SIZE: Four Hectares

FARM OWNER: Julio Soscue Villada

This microlot was produced by Julio Soscue Villada and his family. Julio mainly grows Caturra at La Providencia and farms his coffee with traditional techniques. After working in coffee most of his life, Julio purchased La Providencia farm fifteen years ago. He switched from selling to commercial exporters at local market to focus on specialty production to get better quality to access international market.

This lot was selectively hand-harvested, with most labour being provided by Julio and his family. During peak harvest, the family hires the same local labourers and pickers every year to help harvest the coffee cherry. The cherry was then processed using the washed method. The coffee was hand pulped, and then placed into a fermentation tank. Because of the cooler climate in China Alta, it allows for an extended fermentation process. This fermentation process contributes to a vibrant, winey acidity in the coffee’s cup profile. Following fermentation, the coffee was washed using clean water from the nearby Río La China and then carefully dried (over 10–18 days) on parabolic beds. Once dry, the coffee was delivered to Pergamino’s warehouse, where it was cupped and graded, and then rested in parchment until it was ready for export.
