Up in the mountains of the central cordillera of Colombia, in the municipality of Inza, Jose Jairo Mestizo and his wife Alba Luz have their farm, San Juanito, surrounded by green. Jose has been in coffee production since 1988 when his father-in-law gifted him a parcel to start his own coffee production. Before that, he used to work daily jobs to makes ends meet, but coffee provided a stable source of income for him and his wife. Since acquiring his own farm, he was able to save money, which allowed him to buy the farm he owns today. 

 

Jairo started productions specialty coffee around 2013, motivated by the better prices he could receive, which helped him achieve his dreams. He is very proud of his coffee as it has provided stability for him, his wife, and his son Duber. He is also dedicated to his community and serves as a social leader in the area. At the farm, he plants to continue growing by improving his infrastructure, including the drying space, wet mill and other areas. Jose Jairo carries on a washed process for his coffee, which starts with a good manual cherry picking. They are taken to the wet mill at the farm and pulped the same day. The coffee is then left in the traditional tank to ferment for 18 hours without water. After, the coffee is taken to the parabolic covered beds where it takes from 10-15 days in warm weather and 25-30 days in cold weather.
