This special coffee was processed as a honey lot using coffee cherry from 340 smallholder farmers who deliver to Ruli washing station, one of three washing stations owned by the Dukunde Kawa Cooperative. Ruli is located close to the small town of Mususa, in the Ruli Sector or Gakenke District, in Rwanda’s rugged and mountainous Northern Province. Like most coffee from Rwanda, it is 100% Red Bourbon.
On delivery, the cherries are inspected and sorted by hand to ensure only the very ripest cherries are processed. After sorting, coffee cherries are pulped mechanically (without using water) and placed on raised beds in 3cm heaps. This wet parchment is left untouched and wrapped by a mesh and Nylex material, for up to three days. Once coffee begins to look darker and feel sticky, beans are sorted and turned by workers using freshly washed hands, to prevent any wild fermentation from happening. For around a week, the sticky parchment is turned constantly, with defects being sorted out, until drying begins to homogenise. Reaching the target humidity reading of 11% takes some 25-30 days, depending on the weather.
